Chicken and dumplings is my favorite cold weather food. Whenever it’s rainy and gloomy, which around here is really not very often, this is what I crave. And while this recipe is definitely not my mom’s home cooked chicken and dumplings from scratch, it is super easy and perfect for those busy winter days.
You can use the shredded chicken meat and homemade stock we made earlier, or use up whatever leftover chicken you have in your freezer. Because I had some chicken breasts that had been in my freezer for a while, I decided to use those instead of the chicken I made a few weeks ago, but if you are using that meat, it works just as good. And the bonus part of this recipe is, no defrosting required…just stick the meat in the crock pot frozen and you’re good to go. Lets get started…
Place your chicken into your crock pot.
Add in some cream of chicken soup.
And some chicken broth.
If you’re using the homemade stuff from your freezer, just sit the bag in a bowl of warm water to loosen it from the sides of the bag, no need to defrost it all the way.
Sprinkle on some onion powder, poultry seasoning and some salt and pepper. Add in a little minced garlic.
Cook it on low for 6 hours.
This is what we’re using for the dumplings…refrigerated biscuit dough.
Just tear it into pieces and toss it into the crock pot with the chicken.
If you like your dumplings thinner and more uniform in shape, press the dough flat, then use a pizza cutter to cut it into squares.
Taste it here and add some more seasonings as necessary.
Toss it to make sure the dough is all coated, and cook 1 more hour on low.
At first it may seem like there’s alot of liquid, but the dumplings will soak up all the extra, leaving just enough for gravy.
Serve it up with some steamed veggies. You can cook the veggies with the rest, but then the flavor of the veggies gets into everything and it becomes more of a chicken pot pie than true chicken and dumplings.
