When I went to Hawaii last year, we stopped at a little roadside food stand and ate these yummy pineapple skewers. Ever since we came home, I had been meaning to replicate them, but never got around to it. Well, last week I decided to give it a try.
Start by whisking together some brown sugar, vegetable oil, and white vinegar.
Set this aside. (This makes a somewhat sweet glaze, if you’d like it a bit less sweet, add some soy sauce.)
Then cut one pineapple…
into 1 inch cubes and set them aside.
I used these ham steaks, but you can use a whole ham if thats what you have.
Just cut them into 1 inch cubes. Because I used the steaks, I stacked three together to make a cube.
Thread the ham on the skewers, alternating with pineapple.
Place them on either a grill pan, or your barbque (just be sure to oil the grates if you’re using an actual grill.)
Grill a few minutes on each side.
Towards the end of the cooking time, spread some glaze on each side and grill another minute.
To serve, I took the extra pineapple I had and pureed it in my blender. I then mixed it with the glaze and drizzled this on top of the skewers and on some cooked white rice.
So easy, and so yummy. The flavors of ham and pineapple go together so well.
This is a perfect hot weather dinner, when the thought of turning on the stove is unbearable, but you’re tired of burgers and dogs on the grill. Give it a try this week!
***If cooking these on a barbecue, make sure to soak your skewers in water before placing them over the flame. We don’t want anything to catch fire!
