I’m not above using box cake mix to make cupcakes, but sometimes you just want something a little more special. These cupcakes are it. They’re super rich and chocolate-y, moist and delicious. Try them when you want more than what comes in a box.
This is a two part recipe, I’ll bring you the recipe for the frosting later this week. But let’s get started on the cupcakes….
Begin by stirring together flour, baking soda, baking powder and salt. Set this aside.
In a separate bowl, put some cocoa powder.
Add in some hot water
and stir it until it’s all combined. Set this aside.
Stick some butter in a small saucepan,
and add some sugar
and warm over medium heat until combined.
Remove from heat to large mixing bowl and beat with an electric mixer until cooled, about 4-5 minutes.
Add eggs, one at a time, beating after each until well combined.
Add in vanilla.
and cocoa powder mixture.
Beat until combined.
Add in half the flour mixture and beat well.
Then half the sour cream and mix well.
Finish with the remaining flour, then sour cream and beat until just combined.
Divide the batter among cupcake liners, filling about 2/3 full.
Bake at 350 for 20 minutes, rotating once halfway thru. Allow to cool before frosting.
mmm…even without the frosting these are yum! But make sure to come back on Wednesday for that frosting recipe. It’s just as fabulous as the cupcakes!
