Pico and guac

Here’s another recipe from the party a few weeks ago. I got this one from one of my favorite cookbooks. These recipes are easy, and much tastier than any store bought stuff. During the summer, you can even make the pico with ingredients fresh from your garden. (Assuming you actually can garden and don’t kill everything you touch like I do.)

Start by making the pico first…

You need tomatoes, onion, cilantro, and a jalapeno.

Dice up the tomato, onion and cilantro pretty finely. You want equal amounts of each ingredient so I usually chop the tomatos first and then just eyeball an equal amount of onions and cilantro. Also, make sure you use fresh cilantro, the dried stuff is no good for this.

Then dice up the jalapeno. (Make sure you wear gloves when handling the jalapeno.)

Throw it all into a bowl and give it a good stir to combine…

Viola…homemade pico de gallo. (don’t mind the blurry pics. I was in a hurry. sorry)

To make the guacamole, just peel and mash a few avocados. Squirt some lemon or lime juice on there to keep it from turning brown.

 Then throw a big scoop of the pico de gallo in with the avocados and stir it all together.

Now you have homemade guacamole. It’s super easy. Serve with chips, or in a quesadilla. Maybe on top of some grilled chicken. Or with your carne asada!
