I don’t know about you but it seems like I am always throwing bananas away. I buy them, eat one or two and then before I know it, they are rotten. This is a great way to get rid of your overripe bananas without letting them go to waste. Plus it’s so tasty! And yes, you can get a boxed banana bread mix, and Betty’s mix does a good job, but homemade from scratch just tastes so much better.
Banana Bread
- 4 whole bananas
- 1 stick butter, melted
- 3/4 c. white sugar
- 1/4 c. brown sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1 tsp baking soda
- 1 pinch salt
- 1/4 tsp cinnamon
- 1 1/2 c. flour
In large mixing bowl, mash bananas.
Stir in melted butter.
Add sugars, egg and vanilla.
Stir in baking soda, salt, and cinnamon.
Stir in flour, just until combined. The mixture will be lumpy. Do not over mix!
Place into greased 9×5 (or 8×4) baking dish. Bake at 350 for 1 hour.
MMMmmmm! Yummy! Especially served straight from the oven. Delish! And no more wasted bananas.
