This is the recipe that started it all. The first time I brought this to work, everyone asked for the recipe. It was love at first bite! (Sometimes, I crack myself up!) Anyway, I don’t exactly measure this recipe out when I make it, so these are best guesses at measurements. I usually use at least 2 c. sharp cheddar. The rest of the cheese is usually some combination of mozzarella, colby, and monterey jack. I’ve even been known to shred up some provolone and throw that in there. Feel free to change it up as you like. This is one of those recipes that will win over anyone!
Flicker-doodles Mac and Cheese
- 1 16oz package large elbow macaroni
- 1 stick butter, melted
- 1 8oz package Velveeta cheese, cubed
- 2 cups half and half
- 5 cups shredded cheese, any variety
- 1/2 cup Cheez-it crackers, crushed
Cook pasta according to package directions until al dente. Drain and return to pot. Stir in melted butter. In skillet over low heat, warm half and half. Add velveeta cubes and melt. Stirring as needed. Do not allow it to come to a boil, or burn. Sprinkle in some black pepper.
Pour pasta into large mixing bowl, and add Velveeta mixture. Stir well to coat pasta. Stir in all but about 1 cup of shredded cheese. Taste it here and add more salt and pepper if it needs it.
Place in 9×13 baking dish and cover with foil. Bake at 350 for about 20 minutes.
Remove from heat and give it a good stir to keep edges from drying. Top with some more shredded cheese. Then the crushed cheez-its and then more cheese. (I usually add a little parmesean cheese here. But be advised parmesean doesn’t melt like other cheeses so don’t judge the done-ness by the parmesean.)
Return to oven, covered and bake another 10 minutes or until cheese is melted and bubbling around edges. You can throw it into the broiler for a minute or two at the end if you like it browned and crispy on top, but my broiler tends to burn things (especially when I forget they’re in there as I tend to do,) so I just skip that part. It’s amazing just the way it is.
Sneak out into the backyard and eat the whole pan yourself before anyone notices. Ok, maybe that’s just me, but this really is that good. And definitely worth blowing your diet for!
